Really interesting question, I had to do some research to find the answer.
You’re right…the diameter of an obersver’s pupils is known to have a proportional relation to the observer’s level of interest and attention to a visual stimulus as well as to physical pleasure.

This has been tested using a variety of different methods over the years with the same results; men find women with bigger pupils to be more romantically appealing.

In a scientific study it has been demonstrated that women’s pupils dilate the widest while looking at a prospective partner or loved one during times of ovulation.

And since we know that men find women with large pupils alluring, it seems to be the perfect formula and timing to promote successful reproduction and perpetuation of the species.

I think it has a lot to do with hormones! The hormones that are released when you see something/someone you love cause all sort of change sin your body, including dilation of the pupils.
